Paleo Recipes for Modern Day Cavemen

Blueberry muffins

I used to love fruit pre-paleo. It was there and nice in theory but I would always go for some candy or junk food snacks when grocery shopping to fix any sweet cravings I had. Now with a paleo household, I feel that fruit is the foundation for delicious desserts.  I buy more fruits and vegetables than ever before and am amazed at how much they change a dish instantly.  This recipe was inspired by my sister during a recent road trip to Lake Placid  (hat tip Lauren).  When my husband craves a dessert and/or snack, this is one of the easiest recipes that I whip up to give him.  It’s delicious even for non-paleo diners!! Just be careful not to eat too many, else you start looking like a blueberry

Makes 36 mini muffins
1 cup coconut flour
12 eggs
2/3 cup honey
2/3 cup grapeseed oil
2 cups frozen blueberries
1 tablespoon vanilla extract
1 teaspoon salt

Preheat oven to 350 degrees.

In a large mixing bowl, mix all ingredients together with  a whisk – do not add the blueberries until you have a smooth batter. Once your mixture is creamy smooth without any lumps, add in your blueberries and slowly mix.

Pour the batter into muffin tins (I only have mini-muffin pans but use whatever you want!). Bake in the oven for 25 minutes (my husband likes them a bit on the moist side so I take them out of the oven a little beforehand).

These are great for breakfast, dessert or just a snack. Serve and enjoy!

    • Hi Joy,

      It is really a dozen eggs! But keep in mind this makes a lot of muffins. So feel free to cut the recipe if you want to make less.

  4. Could I use almond flour instead of coconut flour? I am out and these look sooooo good!!

    • Hi Robin,

      Yes you can use almond flour. It’ll taste a little bit grainier because almond flour is chunkier than coconut flour and not as finely ground. But should taste good!

  5. These sound delicious! Would another oil, say coconut or olive, work in place of grapeseed?

    • Hi Laura,

      You can definitely use other oils. I would advise against using olive oil because it’s too heavy and and the flavor for this recipe wouldn’t be the greatest fit. You could try coconut, avocado or even walnut oil instead. Let me know how it goes!

    • Oh no! Sorry to hear that Courtney. I tried to make them again and they tasted sweet to me. Not sure why they were flavourless for you! Did you make any substitutions?

    I made these last night – cut the recipe in half (as I only had 5 eggs) and added 1tsp of baking powder to help them rise! I also used some of the batter to make them with fresh raspberries, rest with fresh blueberries! (Total of 11 normal sized muffins) They came out SO good! Thank you for sharing this recipe! I’m definitely making these again and sharing with people! 🙂

  8. They are so good!! Thanks for the recipe:) How many is too many when you eat them? They are healthy and all but I’m sure there is some limit.

    • Thanks Liza! It’s one of my favorite paleo recipes. With anything, moderation is key. I eat a couple of these a day when I make these but I find that too much of it will make me sick of coconut flour so I don’t make too much of it. Make them and share!
