    Hi … new to paleo and desperately seeking a pie recipe. I have one that I’m trying to perfect and hoping you can give me some pointers. Pumpkin Pie (makes its own crust): 1 1/4 cup Almond milk, 2 eggs, 1 tsp vanilla, 2 cups pureed cooked pumpking, 1/2 cup almond flour,1/2 cup agave nectar, 1 tsp cinnamon, 1/2 tsp nutmeg, 1/4 tsp ground cloves and 1/2 tsp salt. Preheat oven to 350, lightly oil 9 inch deep dish pie pan. Put the first five in blender and blend well, add pumpkin puree and remaining ingredients and blend on high for two minutes, stop to scrape sides a few times. pour into pie pan and bake for 60 minutes. If you dare, let me know what you think 🙂

    Hi … tried it again today and next time I would reduce the agave to 1/3 cup and increase the almond flour to 2/3 cup. Family thought it was great, not sure if they are just being nice or not. 🙂 Love to have your opinion ~ Cathy

    • Cathy – I tried your recipe and it’s delicious! It turned out more like a pudding versus a cake in my version but my husband loved it.
